Pistachio Torta

 

Sicilian Torta di Pistacchio

Adapted from recipe by Carol Walter

Ingredients:

For cake:

1 1/2 cups pistachios, shelled, skinned and finely ground
2/3 cup cake flour, sifted
2 tablespoons cornstarch
7 large egg yolks
1 cup sugar, divided into 1/4 and 3/4 cups
1 teaspoon vanilla extract
1/2 teaspoon grated lemon rind
5 large egg whites
1/4 cup warm, clarified butter

For pastry cream:
6 tablespoons flour
3/4 cup sugar
